We were about to start an amazing journey from Sarajevo to Dubrovnik and these walnut muffins were fresh from the oven and ready to set off.
Ingredients
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon pure vanilla extract
- 1 cup granulated sugar
2 large eggs
1 cup vegetable oil
1 cup milk
1 cup ground walnuts
Directions
- Preheat the oven to 185 °C and lightly grease or line a muffin pan with paper liners. In a bowl, whisk together flour, baking soda, and salt.
- In a large bowl, beat eggs and sugar with a mixer until light and fluffy. Add oil, milk beating well. Stir in vanilla and ground walnuts. With mixer on low, alternately add flour mixture.
- Divide batter among muffin cups. Bake until a toothpick inserted in the centre of a muffin comes out clean, 20 minutes, rotating pan halfway through. Let cool in pan 10 minutes; transfer muffins to a rack to cool more. Sprinkle with powdered sugar if you like.
